Amish Black Bottom Cupcakes
Ingredients & Directions
Preheat oven to 350 degrees
- 8 oz. cream cheese
- 1 egg
- 1/3 cup sugar
- 1 cup chocolate chips
- Combine and mix cream cheese, egg and sugar. Stir in chocolate chips.
- 2 ¼ c. flour
- 1 ½ c. sugar
- 6 tablespoons cocoa
- 1 ½ tsp. baking soda
- 1 ½ c. water
- 1/3 c. plus 3 tablespoons oil
- 1 ½ tablespoons vinegar
- 1 ½ teaspoons vanilla
Mix above ingredients until well mixed. Fill lined cupcake tins 1/3 full of chocolate batter. Top batter with heaping tablespoon of cream cheese mixture.
Bake at 350 degrees for 15 – 18 minutes.
